Deck could span 10' lengthwise with 2x6's on 2' centers 5 will do a 8' width with the first and last attached to the outside of the 6x6 pier posts and the remaining 3 at 2' increments in the midst . 2x8 joists would be better for a few more $$$.
As far as Redwood framing with the pith content in 2nd growth I'd only use 1 heartwood not 2 as in the table. The cantilever overhang can be 1/4 the joist length, but again I would keep that to 2'-6 max. for 2x8.
